Ingredients

1 lb ground beef (80/20 for best flavor)

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon paprika

½ teaspoon dried oregano

½ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

¼ cup beef broth (or water)

8 small corn or flour tortillas

1 cup shredded lettuce

1 cup diced tomatoes

1 cup shredded cheese (cheddar or Mexican blend)

½ cup sour cream

½ cup salsa

Fresh cilantro for garnish (optional)

Lime wedges for serving

Instructions

Brown the Beef: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute, being careful not to burn it.

Add Seasonings: Increase the heat to medium-high and add the ground beef to the skillet. Cook until it’s browned, breaking it up with a wooden spoon as it cooks, about 5-7 minutes. Drain excess grease if necessary.

Season the Meat: Once the beef is browned, stir in the chili powder, cumin, paprika, oregano, salt, and black pepper. Mix well to ensure the meat is well-coated with the spices.

Add Liquid: Pour in the beef broth (or water) and stir to combine. Let it simmer for about 5 minutes, allowing the flavors to meld and the mixture to thicken slightly. Remove from heat.

Warm the Tortillas: In a separate skillet or on a grill, warm the tortillas over medium heat for about 30 seconds on each side, or until pliable. Alternatively, wrap them in aluminum foil and warm them in the oven at 350°F (175°C) for 10 minutes.

Assemble the Tacos: Place a generous spoonful of the beef mixture onto each tortilla. Top with shredded lettuce, diced tomatoes, and cheese.

Add Toppings: Add a dollop of sour cream and a spoonful of salsa on top. Garnish with fresh cilantro and a squeeze of lime juice if desired.

Serve: Serve the tacos warm, with extra toppings on the side for customization.
