1 cup quinoa, rinsed

2 cups vegetable broth or water

2 cups fresh broccoli florets (or frozen)

1 cup sharp cheddar cheese, grated (plus extra for topping)

1 cup milk (dairy or non-dairy)

1/2 cup sour cream or Greek yogurt

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon red pepper flakes (optional)

1/2 cup breadcrumbs (for topping)

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring it to a boil, then reduce heat to low. Cover and simmer for about 15 minutes or until all the liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes before fluffing with a fork.

      Prepare Broccoli: If using fresh broccoli, steam the florets for about 3-4 minutes until they are bright green and slightly tender. If using frozen, you can microwave them according to package instructions until thawed and heated. Set aside.

        Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, steamed broccoli, grated cheddar cheese, milk, sour cream (or Greek yogurt), garlic powder, onion powder, black pepper, salt, and red pepper flakes. Mix until everything is well combined.

          Transfer to Casserole Dish: Pour the quinoa mixture into a greased 9x13 inch casserole dish, spreading it evenly.

            Top with Breadcrumbs: In a small bowl, mix the breadcrumbs with olive oil until they are coated. Sprinkle the breadcrumb mixture evenly over the casserole. Top with additional cheddar cheese for extra cheesiness.

              Bake: Place the casserole in the preheated oven and bake for about 25-30 minutes until the edges are bubbly and the top is golden brown.

                Garnish and Serve: Once baked, remove from the oven and let it sit for about 5 minutes. Garnish with fresh parsley before serving.
