1 cup sugar

1/4 cup unsalted butter

1/4 cup coconut milk

1/2 cup sweetened shredded coconut

1/2 teaspoon sea salt

1/2 teaspoon vanilla extract

1/4 teaspoon baking soda (optional for fluffiness)

1/2 cup roasted peanuts or cashews (optional)

Instructions
 

Pop the Popcorn:

    - In a large pot or using an air popper, pop the popcorn according to the directions. If using a pot, heat about 1 tablespoon of vegetable oil, add the kernels, cover, and shake until popping slows. Once popped, place the popcorn in a large mixing bowl and set aside.

      Make the Caramel:

        - In a medium saucepan, combine the sugar, butter, and coconut milk. Cook over medium heat, stirring constantly until the mixture comes to a gentle boil. Once it boils, stop stirring and let it simmer for 4-5 minutes without stirring, until it turns a deep amber color.

          Add Coconut and Flavoring:

            - Remove the saucepan from heat and quickly stir in the shredded coconut, sea salt, vanilla extract, and baking soda if using. Be cautious, as the mixture will bubble up when adding the baking soda.

              Combine Popcorn and Caramel:

                - Pour the hot caramel mixture over the popped popcorn. Using a spatula or wooden spoon, carefully toss the popcorn to ensure it is evenly coated. If adding nuts, toss them in at this stage.
