4 thick slices of brioche or challah bread

1 cup unsweetened coconut flakes (shredded)

2 eggs

½ cup whole milk (or coconut milk for a coconut boost)

1 tablespoon vanilla extract

1 tablespoon ground cinnamon

1 tablespoon sugar (or to taste)

Pinch of salt

2 tablespoons butter (for frying)
