1 lb large shrimp, peeled and deveined

1 cup coconut milk

1/4 cup fresh lime juice (about 2-3 limes)

2 tablespoons lime zest

2 tablespoons honey or agave syrup

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 teaspoon red pepper flakes (optional for a kick)

Salt and pepper to taste

1 cup unsweetened shredded coconut

Skewers (wooden or metal, soaked in water if wooden)

Instructions
 

Marinate the Shrimp: In a medium bowl, whisk together the coconut milk, lime juice, lime zest, honey, minced garlic, grated ginger, red pepper flakes, salt, and pepper. Add the peeled and deveined shrimp to the marinade, ensuring they're fully submerged. Cover and refrigerate for at least 30 minutes, up to 2 hours for maximum flavor.

    Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. If using metal skewers, simply set them aside.

      Preheat the Grill: Preheat your grill or grill pan to medium-high heat. Make sure your cooking surface is clean and lightly oiled to prevent sticking.

        Coat the Shrimp: Remove the shrimp from the marinade and let any excess liquid drip off. In a shallow dish, spread out the shredded coconut. Roll each shrimp in the coconut until well coated.
