3 cups sweetened shredded coconut

1 cup sweetened condensed milk

1 teaspoon vanilla extract

1/4 teaspoon salt

2 large egg whites

1/4 teaspoon almond extract (optional)

1/2 cup semisweet chocolate chips (for dipping, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper.

    Mix Coconut Ingredients: In a large bowl, combine the sweetened shredded coconut, sweetened condensed milk, vanilla extract, and salt. If using, add the almond extract. Mix everything together until well combined.

      Whip Egg Whites: In a separate bowl, beat the egg whites using an electric mixer on medium speed until soft peaks form. This should take about 2-3 minutes.

        Combine Mixtures: Carefully fold the whipped egg whites into the coconut mixture. Use a spatula to gently incorporate the egg whites without deflating them.

          Form Cookies: Using a tablespoon or a small cookie scoop, drop heaping tablespoons of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the macaroons are golden brown on the edges and slightly firm to the touch.

              Cool: Remove the baking sheet from the oven and let the macaroons cool on the sheet for about 10 minutes before transferring them to a wire rack to cool completely.

                Optional Chocolate Dip: If desired, melt semisweet chocolate chips in a microwave-safe bowl in 15-second intervals, stirring each time until smooth. Dip the bottom or half of each macaroon into the melted chocolate, then place them back on the wire rack to set.
