Ingredients

2 cups unsweetened shredded coconut

1 cup sweetened condensed milk

1 teaspoon vanilla extract

1/4 teaspoon salt

1 cup white chocolate chips (for coating)

Extra shredded coconut (for rolling)

Instructions

In a large mixing bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and salt. Mix until all the ingredients are well incorporated.

Using your hands, take small portions of the mixture and roll them into 1-inch balls. Place the balls on a parchment-lined baking sheet.

Once all the mixture is formed into balls, refrigerate them for about 30 minutes to firm up.

While the coconut balls are chilling, melt the white chocolate chips in a microwave-safe bowl. Heat them in 30-second increments, stirring after each, until fully melted and smooth.

Remove the coconut balls from the refrigerator. Dip each ball into the melted white chocolate, coating it completely, and then roll it in extra shredded coconut to create a snowy finish.

Return the coated coconut snowballs to the parchment-lined baking sheet and allow the chocolate to set (you can place them in the refrigerator for faster setting).

Once set, transfer the snowballs to a serving platter.
