Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1 ripe avocado, peeled and pitted

1/4 cup red onion, finely diced

1/4 cup cherry tomatoes, halved

1/4 cup cucumber, diced

2 tablespoons fresh cilantro, chopped

1 tablespoon lime juice

1 teaspoon ground cumin

Salt and black pepper to taste

4 large lettuce leaves (romaine or butter lettuce work well)

Optional: 1/4 teaspoon red pepper flakes for some heat

Instructions
 

In a medium mixing bowl, mash the avocado with a fork until creamy but still slightly chunky.

    Add the rinsed chickpeas to the avocado and mix well, leaving some chickpeas whole for added texture.

      Stir in the red onion, cherry tomatoes, cucumber, and fresh cilantro into the mixture.

        Drizzle the lime juice and sprinkle the ground cumin over the mixture, then season with salt, black pepper, and optional red pepper flakes. Fold everything together gently until well combined.

          Lay out each lettuce leaf on a flat surface. Spoon a generous amount of the chickpea avocado mixture onto the center of each leaf.

            Fold in the sides of the lettuce and roll it up tightly from the bottom to form a wrap.

              Serve immediately, or refrigerate the wraps for up to an hour if you prefer them chilled.
