Ingredients

1 large cucumber, thinly sliced

8 oz cream cheese, softened

2 tablespoons fresh dill, finely chopped

1 tablespoon lemon juice

Salt and pepper to taste

8 slices of whole grain bread (or your choice of bread)

Optional: Thinly sliced radishes for added crunch

Instructions

Prepare the Dill Cream Cheese: In a medium bowl, combine the softened cream cheese, fresh dill, lemon juice, salt, and pepper. Mix until smooth and well incorporated.

Slice the Cucumber: Wash the cucumber thoroughly and slice it into thin rounds. For added flavor, you can sprinkle a tiny pinch of salt over the slices and let them sit for about 5 minutes to draw out the excess moisture.

Assemble the Sandwiches: Take a slice of bread and generously spread a layer of the dill cream cheese mixture over one side. Then, layer the cucumber slices evenly on top. If desired, add a few radish slices for extra crunch and flavor.

Top and Cut: Place another slice of bread on top to make a sandwich. Using a sharp knife, cut the sandwiches into quarters or halves, depending on your preference.

Chill and Serve: For the best flavor, cover the sandwiches with plastic wrap and refrigerate for at least 30 minutes before serving. This allows the flavors to marry beautifully. Serve cold and enjoy the refreshing taste!
