Cold Sesame Chicken Noodles

For the Noodles:

8 oz. of soba noodles or wheat noodles

1 tablespoon sesame oil

1 tablespoon vegetable oil

For the Chicken:

1 lb. boneless, skinless chicken breast

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon garlic powder

Salt and pepper to taste

For the Sauce:

3 tablespoons tahini (or sesame paste)

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey (or maple syrup)

1 tablespoon chili paste (adjust for spice preference)

2 tablespoons water (to thin consistency)

For the Garnish:

2 green onions, finely chopped

Sesame seeds, toasted

Fresh cilantro, chopped (optional)

Cucumber, thinly sliced (for added crunch)

Instructions
 

Cook the Noodles: Bring a large pot of salted water to a boil. Add the soba noodles and cook according to package instructions until al dente (about 5-7 minutes). Drain and rinse under cold water to stop the cooking process. Toss with sesame oil and vegetable oil to prevent sticking. Set aside.

    Prepare the Chicken: In a medium bowl, combine soy sauce, rice vinegar, garlic powder, salt, and pepper. Add the chicken breasts, ensuring they're well-coated. Let it marinate for at least 15 minutes.

      Cook the Chicken: Heat a non-stick skillet over medium heat. Add a little oil and cook the marinated chicken for about 6-7 minutes per side or until fully cooked (internal temperature of 165°F). Remove from heat and let it cool slightly before slicing it thinly.

        Make the Sauce: In a bowl, whisk together tahini, soy sauce, rice vinegar, honey, chili paste, and water until smooth. Adjust water to achieve desired consistency.

          Combine: In a large bowl, add the cooled noodles, sliced chicken, and sauce. Toss everything together until well combined.

            Serve: Portion the noodles into serving bowls. Garnish with green onions, toasted sesame seeds, fresh cilantro, and cucumber slices for added freshness and crunch.

              Chill (optional): If not serving immediately, cover the bowls with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
