2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon Sriracha (or to taste)

1 tablespoon grated fresh ginger

2 cloves garlic, minced

2 tablespoons sesame seeds (toasted)

2 green onions, thinly sliced

1 cup julienned cucumber

1 cup shredded carrots

Fresh cilantro leaves (for garnish)

Cook the Noodles: Begin by bringing a large pot of water to a rolling boil. Add the noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
