Corn Salad with Lime Dressing

4 cups fresh sweet corn, cooked and cut off the cob (or 2 cans of sweet corn, drained)

1 red bell pepper, diced

1 green bell pepper, diced

1 small red onion, finely chopped

1 cup cherry tomatoes, halved

1 avocado, diced

1 cup black beans, rinsed and drained (optional)

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

For the Lime Dressing:

1/4 cup olive oil

2 tablespoons fresh lime juice

Zest of 1 lime

1 teaspoon honey (or agave syrup for a vegan option)

1/2 teaspoon cumin

1/4 teaspoon garlic powder

Salt and pepper to taste

Prepare the Corn: If using fresh corn, bring a large pot of water to a boil. Add the corn cobs and cook for about 5-7 minutes until tender. Once done, remove the cobs and allow them to cool before cutting off the kernels. If using canned corn, simply drain and rinse.

    Chop the Vegetables: Dice the red and green bell peppers, finely chop the red onion, halve the cherry tomatoes, and dice the avocado. If using black beans, rinse and drain them well.

      Make the Salad Base: In a large mixing bowl, combine the cooked corn, diced bell peppers, chopped onion, cherry tomatoes, avocado, black beans (if using), and chopped cilantro. Season with salt and pepper to taste. Gently toss to mix all the ingredients without mashing the avocado.

        Prepare the Lime Dressing: In a small bowl or jar, whisk together the olive oil, fresh lime juice, lime zest, honey, cumin, garlic powder, salt, and pepper until well combined. Taste and adjust seasoning as desired.
