1 lb ground beef (or turkey)

1 packet taco seasoning mix

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 cup salsa (mild or spicy, based on preference)

1 cup shredded cheddar cheese (plus extra for topping)

1 cup buttermilk cornbread mix

1 cup milk

1 large egg

1 cup shredded lettuce (for serving)

1 medium tomato, diced (for serving)

1 avocado, diced (for serving)

Sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Cook the Meat: In a large skillet over medium heat, brown the ground beef until fully cooked, about 5-7 minutes. Drain the excess fat.

      Season the Meat: Stir in the taco seasoning mix and add the black beans, corn, and salsa. Mix well and let it simmer for about 3-5 minutes until all the ingredients are heated through.

        Prepare the Cornbread Mix: In a separate bowl, whisk together the cornbread mix, milk, and egg until smooth.

          Assemble the Bake: In a greased 9x13-inch baking dish, spread the meat mixture evenly. Pour the cornbread batter over the top and gently spread it out.
