Cottage Cheese and Veggie Bake

2 cups cottage cheese (small curd)

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1 medium zucchini, diced

1 bell pepper (any color), diced

1 small onion, finely chopped

2 cloves garlic, minced

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 large eggs

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for some heat)

Olive oil (for greasing the baking dish)

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with olive oil.

    Sauté the Veggies: In a skillet over medium heat, add a drizzle of olive oil. Sauté the onion and garlic until translucent (about 3-4 minutes). Add the diced zucchini and bell pepper, cooking for another 5-7 minutes until softened. Stir in the chopped spinach and halved cherry tomatoes, cooking until the spinach wilts. Remove from heat.

      Mix the Base: In a large mixing bowl, combine the cottage cheese, eggs, dried oregano, salt, black pepper, and red pepper flakes if using. Mix well until fully incorporated.

        Combine Ingredients: Fold the sautéed vegetables into the cottage cheese mixture, followed by half of the mozzarella cheese and half of the Parmesan cheese. Stir until everything is evenly distributed.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish, smoothing the top with a spatula. Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top.

            Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and bubbly.

              Cool and Serve: Remove the bake from the oven and let it cool for about 5-10 minutes. Garnish with fresh basil leaves if desired, slice, and serve warm.
