1 cup cottage cheese

6 large eggs

1 cup spinach, fresh or thawed and drained

1/2 cup diced bell peppers (any color)

1/2 cup chopped onion

1/2 cup shredded cheddar cheese

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil

Fresh herbs (optional for garnish, such as chives or parsley)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x9 inch or similar baking dish with a little olive oil.

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and bell peppers. Sauté for about 5 minutes until the vegetables are soft.

      Add the spinach to the skillet and cook for an additional 2-3 minutes, just until wilted. Remove from heat and let cool slightly.

        In a large mixing bowl, whisk together the eggs until well beaten. Add the cottage cheese, garlic powder, salt, and black pepper. Mix until combined.

          Gently fold in the sautéed vegetables and shredded cheddar cheese to the egg mixture, ensuring everything is evenly distributed.

            Pour the mixture into the prepared baking dish and spread evenly.

              Bake in the preheated oven for 30-35 minutes, or until the egg is set and the top is gently golden. A toothpick inserted in the center should come out clean.

                Allow the bake to cool for a few minutes before slicing. Garnish with fresh herbs if desired.
