8 oz linguine

1 lb boneless, skinless chicken thighs, diced

4 tbsp cowboy butter (see notes for homemade recipe)

3 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp cayenne pepper (adjust for spice preference)

1 cup cherry tomatoes, halved

1/2 cup heavy cream

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Grated Parmesan cheese for garnish

Optional: Red pepper flakes for extra heat

Instructions
 

Cook the Linguine: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta water.

    Prepare the Chicken: In a large skillet, melt the cowboy butter over medium-high heat. Add the diced chicken thighs, season with salt, pepper, smoked paprika, and cayenne pepper. Cook for about 7-10 minutes until the chicken is cooked through and has a nice golden crust.

      Sauté the Aromatics: Add the minced garlic to the skillet and sauté for about 1-2 minutes until fragrant. Be careful not to burn the garlic.

        Add Tomatoes and Cream: Stir in the halved cherry tomatoes and cook for an additional 3-4 minutes until they soften. Pour in the heavy cream, stirring to combine. Allow the mixture to simmer for 2-3 minutes until slightly thickened. If the sauce is too thick, add reserved pasta water a little at a time until you reach your desired consistency.

          Combine and Serve: Add the cooked linguine to the skillet, tossing to coat the pasta in the creamy sauce. Mix in the chopped parsley and adjust seasoning if necessary. Serve hot, garnished with grated Parmesan cheese and red pepper flakes if desired.
