1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

2 carrots, diced

2 celery stalks, diced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (14.5 oz) diced tomatoes, with juice

2 cups beef or vegetable broth

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

½ teaspoon oregano

Salt and pepper, to taste

1 tablespoon olive oil

Fresh cilantro or green onions, for garnish (optional)

Crusty bread or tortilla chips, for serving (optional)

Instructions
 

Brown the Meat: In a large pot or Dutch oven, heat olive oil over medium heat. Add the ground beef or turkey, and cook until browned, breaking it apart with a spoon as it cooks. Drain excess fat if necessary.

    Sauté the Vegetables: Add the diced onion, garlic, bell pepper, carrots, and celery to the pot. Sauté for about 5-7 minutes, until the vegetables are tender.

      Add the Beans and Corn: Stir in the black beans, kidney beans, and corn. Mix well.

        Combine the Tomatoes and Broth: Pour in the diced tomatoes with their juice and the broth. Stir everything together.

          Season the Soup: Add chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir to incorporate the spices evenly.

            Simmer: Bring the soup to a boil, then reduce the heat to a simmer. Let it cook uncovered for about 20-30 minutes, stirring occasionally, until all the flavors meld together and the soup thickens slightly.

              Taste and Adjust: Taste the soup, adjusting the seasoning with additional salt, pepper, or spices as desired.
