Ingredients

For the Cake:

2 cups all-purpose flour

1 cup granulated sugar

1/2 cup brown sugar, packed

1/2 cup unsalted butter, softened

1 cup sour cream

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 1/2 cups fresh or frozen cranberries (thawed if frozen)

1/2 cup chopped walnuts or pecans (optional)

For the Topping:

1/4 cup brown sugar

1 teaspoon cinnamon

1/4 cup rolled oats

1/4 cup chopped pecans

2 tablespoons unsalted butter, melted

For the Glaze:

1 cup powdered sugar

2 tablespoons milk

1/2 teaspoon vanilla extract

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.

Cream Butter and Sugar: In a separate bowl, cream the softened butter until smooth. Add the sour cream, eggs, and vanilla extract, beating until fully combined.

Combine Mixtures: Gradually incorporate the dry mixture into the wet mixture, stirring until just combined. Do not overmix. Gently fold in the cranberries and nuts (if using).

Pour Batter: Transfer the batter into the prepared baking pan and spread evenly.

Prepare the Topping: In a small bowl, combine brown sugar, cinnamon, rolled oats, chopped pecans, and melted butter. Sprinkle this mixture evenly over the batter in the pan.

Bake: Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Remove the cake from the oven and let it cool in the pan for about 15 minutes. Then, transfer it to a wire rack to cool completely.

Make the Glaze: In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the milk to reach the desired consistency.

Glaze the Cake: Once the cake is cool, drizzle the glaze over the top.

Serve: Slice the cake into squares and enjoy your delicious cranberry bliss coffee cake with a cup of coffee or tea!
