4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

1 cup fresh or frozen cranberries

1/2 cup freshly squeezed orange juice

Zest of 1 orange

1/4 cup honey (or maple syrup for a vegan version)

1 teaspoon Dijon mustard

1 teaspoon dried thyme (or 1 tablespoon fresh thyme, chopped)

1 tablespoon soy sauce or tamari

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.

    Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and sear for about 4-5 minutes on each side until nicely browned and cooked through. Remove the chicken from the skillet and set aside.

      Make the Glaze: In the same skillet, add the cranberries, orange juice, orange zest, honey, Dijon mustard, thyme, and soy sauce. Bring the mixture to a simmer over medium heat. Cook until the cranberries begin to burst and the glaze thickens slightly, about 5-7 minutes.

        Combine: Return the chicken breasts to the skillet, coating them evenly with the cranberry-orange glaze. Let them heat through in the glaze for about 2-3 minutes.

          Serve: Remove the skillet from heat. Place the chicken on a serving platter and generously drizzle with the remaining glaze. Garnish with chopped fresh parsley.
