2 slices of sourdough or whole wheat bread

1 ripe avocado, peeled and pitted

1 cup fresh mozzarella, sliced (or burrata for an extra creamy touch)

1 medium tomato, sliced (heirloom or vine-ripened preferred)

2 tablespoons fresh basil, chopped

2 tablespoons olive oil or unsalted butter

Salt and pepper, to taste

A dash of red pepper flakes (optional)

Balsamic glaze for drizzling (optional)

Instructions
 

Prep the Avocado: In a bowl, mash the ripe avocado with a fork until creamy but still slightly chunky. Season with salt, pepper, and a pinch of red pepper flakes for a touch of heat (if using).

    Assemble the Sandwich: Lay one slice of bread on a clean surface. Spread half of the avocado mash on the slice, then layer with sliced mozzarella and tomato. Sprinkle the fresh basil on top and add the remaining avocado mash. Place the second slice of bread on top.

      Heat the Pan: In a skillet over medium heat, add the olive oil or butter. Allow it to melt and coat the bottom of the skillet evenly.

        Grill the Sandwich: Carefully place the assembled sandwich in the skillet. Cook for about 3-4 minutes on one side until golden brown and crispy.

          Flip and Finish: Gently flip the sandwich using a spatula. Press down slightly to help with even browning. Cook for another 3-4 minutes until the other side is golden and the mozzarella has melted.

            Serve: Remove the sandwich from the skillet and let it sit for 1 minute before slicing. Optionally, drizzle with balsamic glaze for added flavor. Serve warm with a side salad or your favorite dipping sauce.
