12 oz linguine or spaghetti

2 ripe avocados, pitted and peeled

2 cloves garlic, minced

1/4 cup fresh basil leaves, packed

2 tablespoons lemon juice (freshly squeezed)

1/4 cup extra virgin olive oil

Salt and black pepper to taste

1/4 teaspoon red chili flakes (optional)

1/4 cup grated Parmesan cheese (optional, for a non-vegan option)

Chopped fresh basil or parsley, for garnish

Cherry tomatoes, halved, for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and return it to the pot.

    Make the Avocado Sauce: In a food processor, combine the avocados, minced garlic, fresh basil, lemon juice, and olive oil. Blend until smooth and creamy. If the mixture is too thick, gradually add some of the reserved pasta water until you reach your desired consistency.

      Season the Sauce: Taste the avocado sauce and season with salt and black pepper. For an added kick, mix in red chili flakes if desired.

        Combine Pasta and Sauce: Pour the creamy avocado sauce over the warm pasta. Toss well to coat the pasta evenly. If needed, add more reserved pasta water to reach the perfect creamy consistency.
