Creamy Avocado Pasta with Lemon

12 oz spaghetti or your favorite pasta

2 ripe avocados, peeled and pitted

1/4 cup fresh basil leaves

2 cloves garlic, minced

1/4 cup freshly squeezed lemon juice (about 2 lemons)

1/2 cup grated Parmesan cheese

1/4 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

1/4 cup olive oil

Zest of 1 lemon

Cherry tomatoes, halved (for garnish)

Extra basil leaves for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of the pasta cooking water, then drain the pasta.

    Prepare the Avocado Sauce: In a food processor or blender, combine the avocados, basil, garlic, lemon juice, Parmesan cheese, red pepper flakes (if using), salt, and black pepper. Blend until smooth and creamy.

      Emulsify the Sauce: With the food processor running, slowly drizzle in the olive oil until the mixture is well blended and creamy. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.

        Combine Pasta and Sauce: In a large mixing bowl, toss the cooked pasta with the avocado sauce. If the pasta is too dry, gradually add more reserved pasta water until the sauce evenly coats the pasta.

          Serve: Plate the creamy avocado pasta, sprinkle with lemon zest, and garnish with halved cherry tomatoes and additional basil leaves. Serve with extra Parmesan cheese on the side.
