Creamy Baked Penne with Italian Sausage

12 oz penne pasta

1 lb Italian sausage (sweet or spicy, casing removed)

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 can (14.5 oz) diced tomatoes, drained

1 cup heavy cream

1 cup ricotta cheese

1 cup shredded mozzarella cheese, divided

½ cup grated Parmesan cheese

1 tsp dried oregano

1 tsp dried basil

Salt and pepper to taste

2 tbsp olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Brown the Sausage: In a large skillet, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.

        Sauté Vegetables: Add the diced onion and red bell pepper to the skillet with the sausage. Cook until the vegetables are softened, about 4-5 minutes. Stir in the garlic and cook for an additional minute until fragrant.

          Combine Ingredients: Remove the skillet from heat and stir in the drained diced tomatoes, heavy cream, ricotta cheese, dried oregano, dried basil, salt, and pepper. Mix well until combined.

            Mix in Pasta: Add the cooked penne pasta to the mixture in the skillet. Stir until the pasta is evenly coated with the creamy sauce.

              Assemble the Casserole: Transfer the pasta and sausage mixture into a greased 9x13 inch baking dish. Sprinkle the top with shredded mozzarella cheese and grated Parmesan cheese.

                Bake: Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden brown.
