8 oz fettuccine or pasta of choice

2 boneless, skinless chicken breasts

1 cup sliced mushrooms (cremini or button)

2 tablespoons olive oil

2 cloves garlic, minced

1/2 cup balsamic vinegar

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil or parsley for garnish

1 teaspoon Italian seasoning

Optional: 1/4 cup sun-dried tomatoes for an extra burst of flavor

Cook the Pasta: In a large pot, bring salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving a little pasta water.

    Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning on both sides. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let rest, then slice it into strips.

      Sauté the Mushrooms: In the same skillet, add the remaining tablespoon of olive oil and the sliced mushrooms. Sauté for about 4-5 minutes until they are browned and tender. Add the minced garlic and cook for an additional minute until fragrant.

        Make the Sauce: Pour in the balsamic vinegar, scraping the bottom of the skillet to deglaze and incorporate all the delicious bits. Allow the vinegar to simmer and reduce for about 2-3 minutes. Then, lower the heat and stir in the heavy cream, mixing well to combine.

          Combine: Add the grated Parmesan cheese to the skillet and stir until melted and the sauce is creamy. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency. Taste and adjust seasoning with salt and pepper.

            Toss it All Together: Add the cooked pasta to the skillet, followed by the sliced chicken. Toss everything together gently to coat the pasta and chicken in the creamy balsamic sauce.
