Ingredients
  

1 lb (450g) potato gnocchi

2 cups fresh basil leaves, packed

1/2 cup grated Parmesan cheese

1/2 cup heavy cream

1/3 cup pine nuts (toasted)

2 cloves garlic, minced

1/4 cup extra-virgin olive oil

Salt and pepper, to taste

Additional basil and Parmesan for garnish

Cook the Gnocchi:

    In a large pot of boiling salted water, add the potato gnocchi. Cook according to package instructions, usually around 2-3 minutes or until they float to the surface. Using a slotted spoon, remove the gnocchi and drain well.

      Make the Pesto:

        In a food processor, combine the basil leaves, toasted pine nuts, minced garlic, and grated Parmesan cheese. Pulse until finely chopped. With the processor running, slowly drizzle in the olive oil until the mixture is smooth. Season with salt and pepper to taste.

          Combine with Cream:

            In a large skillet over medium heat, add the heavy cream and heat until just simmering. Stir in the freshly made basil pesto and mix well, allowing the sauce to thicken slightly for about 2 minutes.

              Toss the Gnocchi:

                Add the cooked gnocchi to the skillet and gently toss to coat in the creamy pesto sauce. Cook for an additional 2-3 minutes to heat through, ensuring all gnocchi are well-coated.
