Ingredients

12 oz (340g) fettuccine or tagliatelle

1 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup fresh basil, chopped

1/2 cup heavy cream

1 tsp lemon zest

Salt and freshly ground black pepper, to taste

8 oz (225g) burrata cheese, torn into pieces

Grated Parmesan cheese, for serving

Extra basil leaves, for garnish

Instructions

Cook the Pasta:

In a large pot of salted boiling water, cook the fettuccine or tagliatelle according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

      Sauté Garlic and Tomatoes:

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Then, add the halved cherry tomatoes and cook for another 5-6 minutes, until they start to soften and blister.

          Make the Cream Sauce:

Reduce the heat to low, then add the heavy cream and lemon zest to the skillet. Stir well, and let it gently simmer for 2-3 minutes, allowing the flavors to meld. Season with salt and pepper to taste.

              Combine Pasta and Sauce:

Add the cooked pasta to the skillet, tossing it gently to coat in the creamy sauce. If the sauce is too thick, gradually add reserved pasta water until you reach your desired consistency.

                  Add Burrata and Basil:

Gently fold in the torn burrata and chopped basil. Allow the cheese to start melting into the pasta for a few moments for a rich and creamy texture.

                      Serve:

Divide the pasta among plates, topping each serving with extra burrata, a sprinkle of grated Parmesan cheese, and additional basil leaves for garnish. Drizzle with a little more olive oil if desired.

                          Enjoy your Creamy Burrata Pasta!
