Ingredients

2 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

2 tablespoons olive oil

8 ounces fettuccine pasta

2 tablespoons butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup cherry tomatoes, halved

1 cup spinach leaves

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prep the Chicken: Start by seasoning the chicken breasts evenly with Cajun seasoning on both sides. Make sure to massage the spices in for optimal flavor.

Cook the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the seasoned chicken breasts and cook for about 6-7 minutes on each side until they are golden brown and cooked through. Remove them from the skillet and let them rest for a few minutes before slicing them into strips.

Cook the Pasta: While the chicken is resting, bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

Make the Alfredo Sauce: In the same skillet used for the chicken, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute or until fragrant, being careful not to burn it.

Combine Cream and Cheese: Slowly pour in the heavy cream, stirring to combine. Allow it to simmer for about 3-4 minutes. Gradually whisk in the grated Parmesan cheese until the sauce is smooth and creamy. If the sauce seems too thick, add a splash of the reserved pasta water to reach your desired consistency.

Add Veggies: Stir in the cherry tomatoes and spinach, cooking until the spinach is wilted and the tomatoes are slightly softened.

Mix Pasta and Chicken: Add the cooked fettuccine and sliced chicken to the skillet. Toss everything together gently until the pasta is evenly coated with the Alfredo sauce. Season with salt and pepper to taste.

Serve: Plate the creamy Cajun chicken Alfredo immediately. Garnish with freshly chopped parsley for a pop of color and extra flavor.
