8 oz fettuccine or penne pasta

1 tablespoon olive oil

1 pound chicken breast, cut into bite-sized pieces

1 tablespoon Cajun seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

1/4 cup chopped fresh parsley

Zest of 1 lemon

Juice of 1 lemon

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or penne according to package instructions until al dente. Drain and set aside.

    Sear the Chicken: In a large skillet over medium-high heat, add the olive oil. Once hot, add the chicken pieces and season with Cajun seasoning, salt, and black pepper. Sear the chicken for about 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside.
