12 oz penne pasta

1 lb Cajun-seasoned sausage (smoked or Andouille), sliced

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), chopped

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken broth

1 cup shredded sharp cheddar cheese

2 teaspoons Cajun seasoning (adjust to taste)

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Sausage: In a large skillet over medium heat, add the olive oil and sliced sausage. Cook until the sausage is browned and heated through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
