Ingredients

8 oz fettuccine pasta

1 lb chicken breast, diced

1/2 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 tablespoon butter

1 medium onion, chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Begin by boiling a large pot of salted water. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

Season the Chicken and Shrimp: In a mixing bowl, coat the diced chicken and shrimp with Cajun seasoning, ensuring they are well covered.

Sauté Chicken: In a large skillet over medium heat, heat the olive oil. Add the seasoned chicken and cook for about 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Sauté Shrimp: In the same skillet, add the shrimp and cook for 2-3 minutes, or until pink and opaque. Remove and set aside with the chicken.

Cook Vegetables: In the same skillet, melt the butter. Add the chopped onion, garlic, and red bell pepper. Sauté until the onions are translucent and the peppers are tender, about 5 minutes.

Create the Sauce: Pour in the chicken broth and bring to a simmer. Lower the heat and stir in the heavy cream, allowing it to thicken for about 3-4 minutes. Add the grated Parmesan cheese and stir until melted and creamy.

Combine Everything: Add the cooked chicken, shrimp, and drained fettuccine into the skillet. Stir gently to combine everything, adding reserved pasta water as needed to achieve desired creaminess.

Season and Serve: Taste the pasta and adjust the seasoning with salt and pepper if necessary. Serve warm, garnished with fresh parsley.
