Creamy Cajun Shrimp Pasta

8 oz fettuccine or linguine

1 lb large shrimp, peeled and deveined

2 tbsp Cajun seasoning

2 tbsp olive oil

1 medium onion, finely chopped

4 cloves garlic, minced

1 red bell pepper, diced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup chicken or vegetable broth

1 tbsp Worcestershire sauce

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Cook the fettuccine according to package instructions until al dente. Drain and set aside.

    Season the Shrimp: In a bowl, toss the shrimp with the Cajun seasoning until evenly coated.

      Sauté the Shrimp: In a large skillet, heat the olive oil over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Cook the Vegetables: In the same skillet, add the chopped onion and sauté for 2-3 minutes until translucent. Add the minced garlic and cook for another minute.

          Add the Peppers and Tomatoes: Stir in the diced red bell pepper and cherry tomatoes. Cook for 3-4 minutes until the peppers are tender and tomatoes have started to soften.

            Make the Sauce: Pour in the chicken or vegetable broth, heavy cream, and Worcestershire sauce. Stir well to combine and let simmer for 5 minutes, allowing the sauce to thicken slightly.

              Combine Pasta and Shrimp: Add the cooked pasta and shrimp to the skillet. Toss everything together until the pasta is well coated in the creamy sauce. Stir in the grated Parmesan cheese and season with salt and pepper to taste.

                Serve: Divide the pasta among plates, sprinkle with fresh parsley, and additional Parmesan if desired. Serve hot.
