Creamy Cajun Shrimp Pasta with Sausage

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

8 oz Andouille sausage, sliced

2 tablespoons olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 teaspoon Cajun seasoning (adjust to taste)

1/2 teaspoon smoked paprika

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional, for added heat)

1 cup heavy cream

1/2 cup chicken broth

1 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Salt, to taste

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, add the fettuccine pasta. Cook according to package instructions until al dente. Reserve 1/2 cup of pasta water and then drain the pasta. Set aside.

    Sauté the Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the sliced Andouille sausage. Sauté for about 5-7 minutes, until the sausage is browned and starting to crisp. Remove the sausage from the skillet and set aside.

      Cook the Shrimp: In the same skillet, add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Be careful not to overcook. Remove the shrimp and set aside with the sausage.

        Prepare the Vegetables: In the same skillet, add the chopped onion, garlic, and red bell pepper. Sauté for about 3-4 minutes, until they are softened and fragrant.

          Create the Sauce: Sprinkle the Cajun seasoning, smoked paprika, black pepper, and cayenne pepper over the vegetables in the skillet. Stir to combine and cook for about a minute. Add the heavy cream and chicken broth, stirring well to combine.

            Combine Ingredients: Bring the sauce to a gentle simmer, then add the cooked pasta, sausage, and shrimp back into the skillet. Stir until everything is coated well in the creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water until you reach your desired consistency.
