1 medium head of cauliflower, chopped into florets

1 cup vegetable broth

1 cup unsweetened almond milk (or any plant-based milk)

3 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon nutritional yeast (optional, for a cheesy flavor)

1 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

1/4 teaspoon nutmeg (optional, for warmth)

1 pound fettuccine or pasta of choice

Fresh parsley, chopped (for garnish)

Grated vegan Parmesan cheese (optional, for serving)

Instructions
 

Cook the Cauliflower: In a large pot, bring salted water to a boil. Add the chopped cauliflower and cook for about 7-10 minutes, or until tender. Drain and set aside.

    Sauté Garlic: In a skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

      Blend the Sauce: In a blender, combine the cooked cauliflower, sautéed garlic, vegetable broth, almond milk, nutritional yeast, salt, black pepper, and nutmeg. Blend until smooth and creamy. Taste and adjust seasoning as needed.

        Cook the Pasta: While blending the sauce, cook the fettuccine or pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta cooking water, then drain the rest.

          Combine Pasta and Sauce: In a large pot, combine the drained pasta and the cauliflower Alfredo sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired creamy consistency. Toss well to coat the pasta with the sauce.
