Creamy Chicken and Mushroom Pasta Bake

300g penne pasta

2 tablespoons olive oil

1 medium onion, finely chopped

3 garlic cloves, minced

400g chicken breast, diced

250g mushrooms, sliced (button or cremini)

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

300ml chicken stock

200ml heavy cream

100g grated Parmesan cheese

100g mozzarella cheese, grated

Fresh parsley, chopped, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 180°C (350°F).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

        Cook the Chicken: Add the diced chicken breast to the skillet. Season with thyme, oregano, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.

          Add the Mushrooms: Stir in the sliced mushrooms, cooking until they are tender and have released their moisture, about 5 minutes.

            Create the Sauce: Pour in the chicken stock and bring to a simmer. Reduce heat to low and stir in the heavy cream. Cook for 2-3 minutes until the sauce thickens slightly. Remove from heat and mix in half of the Parmesan cheese.

              Combine Pasta and Sauce: In a large mixing bowl, combine the cooked penne pasta with the creamy chicken and mushroom sauce, stirring to evenly coat the pasta.

                Transfer to Baking Dish: Pour the pasta mixture into a greased baking dish (approximately 30x20 cm / 12x8 inches). Sprinkle the top with the remaining Parmesan and the grated mozzarella cheese.

                  Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbling.

                    Serve: Remove the pasta bake from the oven, allow it to cool for a few minutes, and then garnish with fresh chopped parsley before serving.
