Creamy Chicken Bacon Ranch Pasta

12 oz (340g) penne pasta

1 lb (450g) boneless, skinless chicken breasts, diced

6 strips of bacon, cooked and crumbled

3 cups (720ml) heavy cream

1 cup (240ml) chicken broth

1 packet (1 oz) ranch dressing mix

1 cup (100g) shredded cheddar cheese

1 cup (100g) grated Parmesan cheese

2 tbsp olive oil

4 cloves garlic, minced

1 tsp dried parsley

Salt and pepper to taste

Fresh parsley, for garnish (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced chicken, season with salt and pepper, and cook for about 5-7 minutes or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Cook the Bacon: In the same skillet, add the crumbled bacon and cook until crispy. Use a slotted spoon to remove the bacon and set aside with the chicken, leaving the bacon drippings in the skillet.

        Prepare the Sauce: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and chicken broth, stirring well to combine. Sprinkle in the ranch dressing mix and stir until dissolved.

          Thicken the Sauce: Bring the mixture to a simmer and let it cook for about 3-5 minutes, stirring occasionally. The sauce should begin to thicken.

            Add Cheeses: Lower the heat and stir in the shredded cheddar cheese and grated Parmesan cheese. Continue stirring until the cheeses are completely melted and the sauce is creamy.

              Combine Ingredients: Add the cooked pasta, chicken, and crumbled bacon to the sauce. Toss everything together until the pasta is well coated with the creamy ranch sauce.

                Finish and Serve: Sprinkle dried parsley on top for added flavor. Taste and adjust seasoning with salt and pepper if needed. Garnish with fresh parsley if desired. Serve warm!
