Ingredients

4 slices bacon, chopped

1 can (15 oz) sweet corn, drained

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

¼ teaspoon cayenne pepper (optional, for heat)

2 tablespoons fresh chives, chopped

Salt and pepper to taste

Instructions

Cook the Bacon: In a medium skillet over medium heat, cook the chopped bacon until crispy. Remove and drain on paper towels, leaving a bit of rendered fat in the skillet.

Prepare the Base: In a large mixing bowl, combine the softened cream cheese, sour cream, and shredded cheddar cheese. Use a hand mixer on low speed or a spatula to blend until smooth and creamy.

Add the Corn and Seasonings: Fold in the drained sweet corn, cooked bacon, garlic powder, onion powder, smoked paprika, cayenne pepper (if using), and half of the chopped chives. Season with salt and pepper to taste. Mix until everything is well combined.

Transfer and Bake: Preheat your oven to 350°F (175°C). Spread the mixture into a baking dish. Bake for about 20-25 minutes, or until the dip is heated through and the edges are bubbly.

Garnish and Serve: Remove from the oven and sprinkle the remaining chives on top. Serve warm with tortilla chips, sliced veggies, or toasted baguette slices for dipping.
