Creamy Corn Pasta

12 oz fettuccine or pasta of choice

2 cups fresh or frozen corn kernels

1 cup heavy cream

1 cup vegetable broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup grated Parmesan cheese

2 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1/2 tsp red pepper flakes (optional for spice)

Fresh basil or parsley for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté for about 5 minutes until translucent. Add minced garlic and sauté for another minute until fragrant.

      Add Corn: Stir in the corn kernels and cook for about 3-4 minutes until they are tender (if using frozen corn, thaw it first).

        Make the Sauce: Pour in the vegetable broth and bring the mixture to a simmer. Allow it to cook for 5 minutes. Then, add the heavy cream and stir well. Let it simmer for another 2-3 minutes until slightly thickened.

          Combine: Add the grated Parmesan cheese to the sauce, stirring until melted and creamy. If the sauce is too thick, gradually add the reserved pasta water until you achieve your desired consistency.

            Season: Season the creamy mixture with salt, black pepper, and red pepper flakes (if using) to taste.
