Ingredients

2 large cucumbers, thinly sliced

1 cup plain Greek yogurt

2 tablespoons mayonnaise

2 tablespoons fresh dill, chopped (plus extra for garnish)

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1 tablespoon honey (or agave for a vegan option)

Salt and pepper to taste

Optional: ¼ cup red onion, finely chopped

Instructions

Begin by washing the cucumbers thoroughly. If desired, peel them for a smoother texture. Slice them thinly and place them in a large mixing bowl.

In a separate bowl, combine the Greek yogurt and mayonnaise, mixing until smooth.

Add the fresh dill, apple cider vinegar, garlic powder, honey, salt, and pepper to the yogurt mayonnaise mixture. Stir until all ingredients are well blended.

Fold the creamy dressing into the thinly sliced cucumbers. If you're using red onion, add it at this stage for an extra crunch and flavor.

Adjust seasoning if necessary by adding more salt, pepper, or dill based on your taste preferences.

Cover the salad and let it chill in the refrigerator for at least 30 minutes to allow the flavors to meld together. This also enhances the creamy texture.

Before serving, give it a gentle stir and garnish with additional chopped dill on top for an extra pop of freshness.
