4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

4 cups vegetable broth

1 cup heavy cream or coconut milk for a dairy-free option

2 tablespoons olive oil

1 teaspoon thyme (dried)

1 teaspoon rosemary (dried)

Salt and pepper to taste

1 cup shredded cheddar cheese (optional, for serving)

¼ cup fresh chives or green onions, chopped (for garnish)

½ cup bacon bits (optional, for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté for about 5 minutes, or until translucent.

    Stir in the minced garlic and cook for an additional minute until fragrant.

      Add the diced potatoes to the pot, followed by the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.

        Once the potatoes are cooked, use an immersion blender to puree the soup until smooth. For a chunkier texture, reserve some potato pieces before blending and stir them back in.

          Stir in the heavy cream (or coconut milk), thyme, rosemary, salt, and pepper. Allow the soup to heat through, about 5 more minutes.

            Taste and adjust seasoning if necessary. If desired, stir in shredded cheddar cheese until melted and creamy.

              Serve hot, garnished with fresh chives or green onions, and top with bacon bits if using.
