Creamy Garlic Chicken & Spinach Bake

4 boneless, skinless chicken breasts

2 cups fresh spinach, washed and dried

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon dried Italian herbs (or fresh if preferred)

Salt and pepper, to taste

1 tablespoon lemon juice

1 teaspoon crushed red pepper flakes (optional)

Fresh parsley, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and lightly grease a 9x13-inch baking dish.

    Sauté the Spinach: In a large skillet over medium heat, add olive oil. Once hot, add minced garlic and sauté for about 1 minute until fragrant. Add the fresh spinach and cook until just wilted, about 2-3 minutes. Remove from heat and set aside.

      Prepare the Creamy Sauce: In a medium saucepan, combine heavy cream, chicken broth, and half of the grated Parmesan cheese. Stir in dried Italian herbs, lemon juice, salt, pepper, and red pepper flakes (if using). Heat over medium-low heat until warmed but not boiling, stirring occasionally.

        Assemble the Bake: In the greased baking dish, lay the chicken breasts in a single layer. Season with salt and pepper. Evenly distribute the sautéed spinach on top of the chicken. Pour the creamy sauce mixture over the chicken and spinach. Sprinkle the remaining Parmesan cheese and shredded mozzarella on top.

          Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is bubbly and golden brown.

            Serve: Remove from the oven and let it sit for a few minutes before serving. Garnish with freshly chopped parsley for a pop of color. Serve hot with crusty bread or over a bed of rice.
