Creamy Garlic Herb Chicken Thighs

4 bone-in, skin-on chicken thighs

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons olive oil

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon dried rosemary

½ teaspoon dried oregano

½ cup grated Parmesan cheese

Fresh parsley, chopped for garnish

Prepare the Chicken: Start by patting the chicken thighs dry with paper towels and season them generously with salt and black pepper on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken thighs skin-side down and cook for about 7-8 minutes until the skin is golden brown and crispy. Flip and cook for an additional 5 minutes on the other side. Remove the chicken from the skillet and set aside.

      Sauté Garlic: In the same skillet, reduce the heat to medium, add the minced garlic, and sauté for about 1 minute until fragrant. Be careful not to burn the garlic.

        Make the Sauce: Slowly pour in the chicken broth while scraping the bottom of the skillet to release any brown bits. Stir in the heavy cream, Dijon mustard, thyme, rosemary, and oregano. Bring the mixture to a simmer.

          Add the Cheese: Once the sauce starts to bubble, stir in the Parmesan cheese, continuing to stir until it melts and the sauce is creamy.

            Return Chicken to Skillet: Add the seared chicken thighs back into the skillet, skin-side up. Spoon some sauce over the top and let everything cook together on low heat for about 10-15 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and is cooked through.
