1 large head of cauliflower, cut into florets

4 cloves of garlic, peeled

1/4 cup unsweetened almond milk (or any low-carb milk alternative)

3 tablespoons unsalted butter (or flavored olive oil for a vegan option)

1/4 cup grated Parmesan cheese (optional for extra creaminess)

Salt and black pepper, to taste

Fresh chives or parsley, finely chopped for garnish

Cook the Cauliflower: In a large pot, add the cauliflower florets and garlic cloves. Cover them with water, add a pinch of salt, and bring to a boil. Reduce the heat to a simmer and cook until the florets are tender, about 10-12 minutes.

    Drain Thoroughly: Once cooked, drain the cauliflower and garlic well. Let it sit in the colander for a few minutes to ensure any excess water is completely drained. This helps achieve a creamy consistency.

      Blend: In a food processor or using an immersion blender, combine the drained cauliflower and garlic with the butter (or olive oil) and almond milk. Blend until smooth and creamy. If you’re using Parmesan cheese, add it now for an extra rich flavor.
