Creamy Garlic Parmesan Chicken Skillet

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon paprika

1 cup spinach (fresh or frozen, thawed and drained)

½ cup sun-dried tomatoes, chopped

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Chicken: Season both sides of the chicken breasts generously with salt and pepper.

    Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Once hot, add the chicken breasts and sear for 5-7 minutes on each side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Garlic: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

        Make the Sauce: Pour in the chicken broth and scrape the bottom of the skillet to deglaze it. Add the heavy cream, Parmesan cheese, Italian seasoning, and paprika to the skillet. Stir well and bring to a simmer.

          Add Vegetables: Once the sauce is simmering, add the spinach and sun-dried tomatoes. Cook for an additional 2-3 minutes, allowing the spinach to wilt and the sauce to slightly thicken.

            Combine Chicken and Sauce: Return the seared chicken breasts to the skillet, spooning the sauce over the chicken. Let it cook together for another 5 minutes, allowing the flavors to meld.

              Garnish and Serve: Once the chicken is heated through, remove from heat. Garnish with freshly chopped parsley. Serve it hot, paired with a side of your choice—like pasta, rice, or a fresh salad.
