12 oz fettuccine or your favorite pasta

2 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream

1 cup grated Parmesan cheese

2 cups fresh spinach, roughly chopped

Salt and freshly ground black pepper, to taste

1 tablespoon lemon juice

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Sauté Garlic: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes, or until the garlic is fragrant and lightly golden.

      Make the Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Gradually add the grated Parmesan cheese, whisking until melted and smooth. If the sauce is too thick, slowly add some reserved pasta water until you reach your desired consistency.
