Ingredients

8 oz fettuccine or linguine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon unsalted butter

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

½ cup grated Parmesan cheese

1 cup spinach leaves (fresh)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Cook the pasta: In a large pot, bring salted water to a boil. Add the fettuccine or linguine and cook according to package directions until al dente. Drain and set aside, reserving ½ cup of pasta cooking water.

Sauté the shrimp: In a large skillet over medium heat, add the olive oil and butter. Once melted and hot, add the shrimp. Season with salt and black pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

Prepare the garlic sauce: In the same skillet, lower the heat to medium-low and add the minced garlic and red pepper flakes. Sauté for about 30 seconds or until fragrant, being careful not to burn the garlic.

Add cream and cheese: Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, gradually add some of the reserved pasta water until you reach your desired consistency.

Combine ingredients: Add the cooked pasta back into the skillet along with the sautéed shrimp and fresh spinach. Toss everything together until the spinach wilts and the pasta is well coated with the sauce. Adjust seasoning with salt and pepper, if needed.

Serve: Plate the creamy garlic shrimp pasta and garnish with freshly chopped parsley and a squeeze of lemon juice. Serve immediately with extra lemon wedges on the side.
