Creamy Garlic Spinach Gnocchi

1 lb (about 450g) potato gnocchi

2 tablespoons olive oil

4 cloves garlic, minced

8 oz (about 225g) fresh spinach (or 4 oz frozen spinach, thawed)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

Fresh basil, for garnish (optional)

Instructions
 

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to the package instructions until they float to the surface (about 2-3 minutes for fresh or 4-5 minutes for frozen). Drain and set aside.

    Sauté the Garlic: In a large skillet over medium heat, heat the olive oil. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to let it burn.

      Add the Spinach: If using fresh spinach, add it to the skillet. Sauté until wilted (about 2-3 minutes). If using frozen spinach, ensure it is fully thawed and drained, then add to the skillet.

        Make the Creamy Sauce: Reduce the heat to low, and pour in the heavy cream. Stir gently to combine, cooking for about 2 minutes until warmed through.

          Incorporate Cheese and Season: Add the grated Parmesan cheese to the skillet, stirring consistently until melted and the sauce thickens slightly. If you like a bit of heat, add the red pepper flakes at this stage. Season with salt and black pepper to taste.

            Combine Gnocchi and Sauce: Carefully add the cooked gnocchi to the skillet, gently tossing to coat them in the creamy garlic sauce. Allow everything to cook together for an additional 2-3 minutes to heat through.

              Serve: Once everything is well combined, transfer to serving plates or a large bowl. Garnish with fresh basil if desired and serve immediately.
