4 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 tablespoon Dijon mustard

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon fresh parsley, chopped (for garnish)

For the Basmati Rice:

1 ½ cups basmati rice

3 cups water or chicken broth

1 tablespoon butter

1 teaspoon salt

Zest of 1 lemon (optional)

Prepare the Rice: Rinse the basmati rice under cold water until the water runs clear to remove excess starch. In a medium saucepan, combine the water (or chicken broth), 1 tablespoon of butter, salt, and lemon zest (if using). Bring to a boil, add the rice, and stir briefly. Cover the pot, reduce heat to low, and let simmer for 15 minutes. Turn off the heat and let it sit for an additional 5 minutes before fluffing with a fork.

    Cook the Chicken: While the rice is cooking, season both sides of the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove chicken from the skillet and set it aside.

      Make the Creamy Sauce: In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Deglaze the pan with chicken broth, scraping up any browned bits. Bring to a simmer, then stir in the heavy cream, Dijon mustard, thyme, and rosemary. Allow the sauce to cook for about 3-5 minutes until it thickens slightly.
