Creamy Jalapeño Corn Dip

Ingredients
  

2 cups fresh corn kernels (about 4 ears of corn, or use frozen corn)

1 cup cream cheese, softened

1 cup sour cream

1 cup shredded cheddar cheese

1/2 cup mayonnaise

2-3 fresh jalapeños, diced (adjust based on heat preference)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1 teaspoon lime juice (freshly squeezed)

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips, for serving

Instructions
 

Prepare the Corn:

    - If using fresh corn, shuck the ears and cook them in boiling water for about 5-7 minutes until tender. Remove from heat, cool slightly, and cut the kernels off the cob.

      - If using frozen corn, simply thaw and drain.

        Mix the Base:

          - In a large mixing bowl, combine the softened cream cheese, sour cream, mayonnaise, and shredded cheddar cheese. Stir until smooth and well combined.

            Add the Flavorings:

              - Add the diced jalapeños, garlic powder, onion powder, smoked paprika, lime juice, and season with salt and pepper. Mix well to evenly distribute all the ingredients.
