4 boneless, skinless chicken breasts

1 cup fresh spinach, chopped

1 cup cream cheese, softened

1/2 cup sour cream

1/2 cup grated Parmesan cheese

1 lemon (zested and juiced)

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1/4 cup chicken broth (optional, for thinner sauce)

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Chicken: Preheat your oven to 375°F (190°C). Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness (about 1/2 inch) for even cooking.

    Make the Creamy Filling: In a mixing bowl, combine the softened cream cheese, sour cream, grated Parmesan cheese, lemon zest, lemon juice, minced garlic, dried thyme, salt, and black pepper. Mix until smooth and creamy.

      Assemble the Swirls: Spread an even layer of the creamy filling over each chicken breast. Sprinkle the chopped spinach on top. Starting from one end, carefully roll the chicken breast tightly, encasing the filling inside.

        Secure the Rolls: Use toothpicks or kitchen twine to secure the ends of the rolled chicken. This will help keep the filling from spilling out during cooking.

          Sear the Chicken: In a large, oven-safe skillet, heat the olive oil over medium-high heat. Once hot, place the chicken rolls seam-side down in the skillet. Sear for about 3-4 minutes until golden brown, then gently turn and sear the other side for another 3-4 minutes.

            Bake in the Oven: Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 74°C). If you want a saucier dish, add the chicken broth to the skillet before baking.

              Serving: Once cooked, remove the chicken from the oven and let it rest for a few minutes. Carefully remove the toothpicks or twine, then slice the rolls into pinwheels. Arrange on a serving platter and garnish with fresh parsley.
