Ingredients

1 cup orzo pasta

2 tablespoons olive oil

3 cloves garlic, minced

4 cups fresh spinach, roughly chopped

1 cup vegetable broth

1 cup heavy cream

Zest and juice of 1 large lemon

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Orzo: In a large pot, bring salted water to a boil and add the orzo. Cook according to package instructions, usually about 9-11 minutes. Once cooked, drain and set aside.

Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 1 minute until fragrant.

Add the Spinach: Add the chopped spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until wilted.

Create the Creamy Sauce: Pour in the vegetable broth and heavy cream, stirring to combine. Let it simmer for about 5 minutes, allowing it to thicken slightly.

Incorporate Lemon: Add the lemon zest and juice to the sauce, stirring well. Then mix in the grated Parmesan cheese until melted and creamy. Season with salt and black pepper to taste.

Combine with Orzo: Add the cooked orzo to the skillet, stirring gently until the pasta is fully coated with the creamy mixture. Cook for an additional 2-3 minutes to heat through.

Serve: Spoon the creamy lemon orzo into bowls, and garnish with fresh chopped parsley. Enjoy your delightful dish warm!
